African Minis

Here is our puff pastry baking idea from the "Recipes around the world" series for delicious vegan African Minis. Let us inspire you!

Moin Bio Vollkorn Blätterteig

Ingredients for 24 minis
1 pack Moin Organic Wholemeal Puff Pastry Vegan
100 g sweet potato
100 g sweetcorn
300 g cherry tomatoes
40 g dried apricots
1 bunch of coriander
2-3 tbsp peanut sauce
salt & pepper
olive oil
1 mini muffin tray
margarine (e.g. Alsan)

We baked the Minis with our Organic Wholemeal Puff Pastry Vegan, but they also work with any other Moin pastry. 

Preparation
1. Preheat oven to 175°C (fan-assisted). Take the puff pastry sheets out of the packaging, separate and leave them to thaw for approx. 5 minutes. Grease the mini muffin tray with soft margarine. Place pastry sheets on top of each other and cut them into four equal squares. Now you have 24 small pastry squares to place in the cups of your muffin tray. Press the dough firmly into the cups.

2. Peel the sweet potatoes and cut into small cubes. Quarter the tomatoes and chop the coriander. Chop the apricots into small cubes.

3. Fry the sweet potatoes in olive oil until they start to brown. Add the corn, tomatoes and peanut sauce. Season to taste with salt and pepper and remove the pan from the heat. Let the filling cool slightly and then stir in the coriander and apricots.

4. Divide the filling evenly between the 24 muffin cups and bake in the middle of the preheated oven for approx. 30 minutes.
