Apple Apricot Strudel

An apple (strudel) a day keeps... 

...whatever, enjoy!

Preparation time: approx. 10-15 min.
Baking time: approx. 25-30 min.

Ingredients makes 2 strudel

1 pck. MOIN Spelt Strudel Dough Vegan
2-3 apples
100 g apricots (alternatively: soft dried apricots)
1 tbsp raisins
2-3 tbsp vegan cookie crumbs
Icing sugar

Preparation

1. Preheat oven to 180°C (fan-assisted). 

2. Peel and dice the apples, slice the apricots and mix both with the raisins. 

3. Roll out the strudel dough with the baking paper and cut both in half.  

4. Cover 1/3 of each dough with cookie crumbs starting from a short end (see diagram). Leave a free rim of 2-3 cm. Spread the fruit filling over the cookie crumb layers.

5. Brush the edges of the dough with a little water, fold the dough over on the left and right and then roll up the filled dough using the baking paper. 

6. Place both strudels on a baking tray lined with the baking paper with the seam facing downwards. Cut off excess baking paper. Brush the strudels with some water.

7. Bake on the middle shelf in the preheated oven for approx. 25-30 minutes until golden brown. Before cutting, allow to cool a little and dust with icing sugar.
