Mediterranean puff pastry pockets

With our three new fresh spelt doughs and a little inspiration you can conjure up all kinds of things, for example this tasty savoury snack creation. Make love not waste!

Preparation time: approx. 30 min.
Baking time: approx. 10-15 min.

MOIN Frischteige

Ingredients a snack for 6 people

1 pck. MOIN Spelt Puff Pastry Dough Vegan

1/2 zucchini

1/2 aubergine

1 small red onion

1 garlic clove

50 g canned tomatoes

12 olives without stones

2 tbsp red or Green pesto

a few cherry tomatoes   

olive oil

salt & pepper

Preparation

1. Take the puff pastry out of the fridge.

2. Preheat oven to 200°C (fan-assisted).

2. Clean and chop the vegetables. Cut cherry tomatoes into quarters. Peel and chop onion and garlic. 

3. Heat some olive oil and briefly fry the vegetables in it. Season with salt and pepper. Chop the canned tomatoes and olives and add to the mix.

4. Roll out the puff pastry with the baking paper, cut the dough into 6 equal squares and place them on a baking tray with the baking paper. Cut off excess baking paper.

5. Spread the squares thinly with pesto. 

6. Place some vegetables in the middle of each square, fold the corners in to the middle and press them down lightly. Brush with a little olive oil. Put some vegetable filling aside for later.

7. Bake in the preheated oven for about 10-15 minutes until the edges of the dough are golden brown.

8. Take the puff pastry pockets out of the oven and garnish with the remaining vegetable filling.
