Mexican Chilli con carne

Here is our puff pastry baking idea from the "Recipes around the world" series for chilli con carne triangles. Let us inspire you!

Ingredients for 6 big or 24 small triangles
1 pck. MOIN organic spelt puff pastry
150 g minced beef
1 small onion or shallot
2 garlic cloves
100 g kidney beans in tomato sauce
100 g green capsicum, chopped
3 tbsp tomato puree
4-6 cl red wine
2 small pieces of dark chocolate
chilli pepper (according to personal taste)
1 tsp cumin
salt
parsley, finely chopped
100 g grated cheese
olive oil for frying
1 cup crème fraîche (alternatively: guacamole)

We used our spelt puff pastry for this recipe - but you could also use any other MOIN puff pastry (e.g. wholemeal or butter puff pastry).

Preparation

1. Preheat oven to 175° C (fan-assisted). Take MOIN organic spelt puff pastry out of the freezer, separate dough sheets and allow to defrost for approx. 5 minutes.

2. Finely chop the onion, garlic and chilli. Lightly fry in a pan with olive oil, then add the minced meat and the cumin. 

3. Add the tomato paste, beans and the chopped capsicum and simmer together with the red wine. At the end add the chocolate and the chopped parsley while stirring. Season with salt and allow to cool slightly. 

4. Spread the filling over the 6 dough sheets, fold into triangles and press the sides together with a fork. Place on a baking tray lined with baking paper, sprinkle with the grated cheese and bake in the middle of the oven for about 25 minutes until golden brown. If you want to make smaller bites, quarter each dough sheet and proceed as you would with the large corners. 

4. To serve, add a little crème fraîche and/or guacamole.
