Potato and Artichoke Pizza

makes 3 small pizzas (or 1 big one)

Preparation time: approx. 30 min.
Baking time: approx. 15 min.

Ingredients
1 pack Moin Organic Spelt Pizza Dough Vegan
1 onion (peeled and chopped)
150 g artichoke hearts
2-3 potatoes (peeled and finely sliced)
3 tbsp tomato sauce
olive oil

Optional: salt, rosemary, fennel & aniseed or some grated vegan cheese alternative

Preparation
Take the pizza dough sheets out of the paket and let them thaw for about 15 minutes. Preheat the oven to 250°C. Prepare the onions and potatoes. Roll out the dough and place it onto a baking tray lined with baking paper. Spread the tomato sauce onto the pizza dough, sprinkle with onion pieces and then lay two rows of potato slices on each pizza leaving some space in between. Fill the space with two rows of fanned-out artichoke hearts. Drizzle some olive oil on top and season with rock salt. Now, this is where I couldn't quite make up my mind. That's why I did three different variations: the first pizza I seasoned with rosemary, the second pizza with a mix of fennel and aniseed and the third pizza I covered with a grated vegan cheese alternative. Bake for approx. 15 minutes until golden.

My colleague's son had the pizza seasoned with rosemary and his response was: "That must be the best pizza chef in the world." Hurray! :-)
