The twelve stars of Christmas

Apple-Cinnamon-Stars

Fine, crispy puff pastry stars with a wintry apple sauce - a recipe for a relaxed and delicious Christmas season.

Ingredients for 12 big stars and lots of little puff pastry biscuits

2 Pck. MOIN Organic Vegan Puff Pastry

For the apple sauce:
2 big apples
juice of half a lemon
2-3 tbsp sugar
1/2 tsp cinnamon
1 tsp winter spices (e.g. from "Lebensbaum"*)
1 EL corn starch
a little water (about 50 ml)
a little soy milk for brushing

3 cookie cutters: large star (approx. 7.5 cm ø), small circle (approx. 4 cm ø), another small cookie cutter

Preparation

1. For the wintry apple sauce, peel, core and cut the apples into small pieces. Put the apple pieces in a pot with some water, add the sugar, lemon juice and spices and simmer until the desired consistency is reached, depending on how firm you like your apples to be.

2. Mix the corn starch with a little water and add to the pot with the apple pieces. Bring to the boil again and let it thicken. Allow the stewed sauce to cool.

3. Place the puff pastry sheets next to each other and allow to defrost for approx. 5 minutes. 

4. Cut out 2 large stars per sheet, as well as many mini biscuits from the remaining dough using the smaller cookie cutter. Now, cut out a circle (approx. 4 cm ø) in the centre of 6 of the large stars.

5. Preheat the oven to 180 °C (fan-assisted).

6. Place the mini biscuits and the 6 stars without cut-outs on a baking tray lined with baking paper. Place 1 tbsp apple sauce in the middle of each large star and cover with one "holed" star each. Gently press down the edges of the stars lightly and brush with soy milk. 

7. Bake for approx. 12-15 mins until golden brown, depending on the type of your oven.


Optional: If you like, sift a little icing sugar over the finished biscuits.

We baked these apple-cinnamon-stars with our Organic Vegan Puff Pastry, but they can also be made with any other MOIN puff pastry.
