Change Baker

BioFach 2024

We are part of the change!

From 13 to 16 February 2024, we were at the world's leading trade fair for organic food in Nuremberg.

Here is a taster of what we brought along:

MOIN Bio Backwaren House Bread with natural sourdough in 4 kg

Crispy on the outside, soft and large-pored on the inside. Our house bread is baked hot at almost 300 degrees directly on a stone plate. This is how its wonderful crust is created. Made with natural sourdough and without technical enzymes, our House Bread matures for a minimum of 24 hours. This ensures a wonderful flavour and long-lasting freshness. Great bread pleasure, now in a new weight category: 4 kg.

Fancy something wild? Try our hearty pretzel strudel with a savoury filling of sauerkraut and mustard cream. The Krautrock Vegan is a cooperation product with SUUR, a specialist in fermented vegetables.

Strong teamwork, strong flavour.

Oh, là, là... our typical French pain au chocolat is now also available in vegan! Made with a high-quality, palm oil free vegetable margarine based on shea butter and coconut oil. And with perhaps the fairest chocolate in the world - from our partner fairafric. Chocolatey delicious and fair!

GOOD BREAD. For everyone. Also for people who can't tolerate gluten.

MOIN MOILAS HAFFYS glutenfrei

Together with our friends from MOILAS in Finland, we have developed our HAFFYS - natural, gluten-free oat toasties. Available in three delicious varieties, both for self-service on the dry shelf and deep-frozen for the bakery counter or bistro area.

MOIN Bio Backwaren - Neue Geschäftsführung

Master baker and artist Hans-Paul Mattke founded the company almost 30 years ago with the aim of producing a really good organic wholemeal butter croissant. In the summer of 2023, employees Vicky Leskien, Julianna Müller and Jule Usadel joined the management - a young, female leadership team with which MOIN is entering a new era as "change baker". After all, life is change. We look to the future with confidence because we know that we can play a positive role in shaping it through the production of sustainably produced food. At MOIN, 78 people with different cultural backgrounds work together in order to produce a wide range of deep-frozen baked goods and provide as many people as possible with good organic food.
